Last night I made some Peanut Butter Cookies and though they aren’t exactly like Grandmas, I did make the criss- cross on tops with a fork like they way she did. Holding some flour in the cup of my left hand to dip the fork in, to make sure it doesn’t get sticky from pressing the dough.

I used the recipe out of my trusty Betty Crocker cookbook, with slight variations; I didn’t have any shortening so I just used a stick of margarine, and I didn’t wait 3 hours to refrigerate dough before baking.

Peanut Butter Cookies
1/2 C Granulated Sugar
1/2 C Packed Brown Sugar
1/2 C Peanut Butter
1 Stick of Softened Margarine
1 Egg
1 1/4 C All Purpose Flour
3/4 Tsp Baking Soda
1/2 Tsp Baking Powder

Mix sugars, peanut butter, margarine & egg. Stir in remaining ingredients. recipe calls for covering dough and putting in refrigerator for 3 hours, but who’s got that kind of time when a girl just wants a cookie to eat?!?!

Oven should be set to 375. Shape dough into balls. Place about 3 inches apart on cookie sheet. Flatten in criss-cross pattern with fork dipped into flour. Bake about 10 minutes until light brown.
